Delicious Malva Pudding with Apricot Jam

This recipe outlines how to make a cake using flour, sugar, egg, and apricot jam, topped with a creamy sauce after baking until golden.


Ingredients

  • 200 g (±250 ml) cake flour
  • 200 g (±250 ml) sugar
  • 1 large egg
  • 15 ml apricot jam
  • 5 ml bicarbonate of soda
  • 5 ml vinegar
  • 15 ml melted butter
  • 125 ml milk
  • A pinch of salt
  • 125 ml cream
  • 125 ml sugar
  • 125 ml butter (melted)
  • 125 ml hot water

Preparation

  1. Preheat oven to 180°C.

  2. Batter

    In a mixing bowl, cream sugar and egg. Add apricot jam, melted butter, and vinegar.

  3. Dry ingredients

    In a separate bowl, sift together flour, salt, and bicarbonate of soda.

  4. Combine

    Add dry ingredients alternately with the milk to the sugar-egg mixture. Mix until smooth.

  5. Bake

    Pour batter into a greased oven dish and bake for 30–35 minutes or until golden brown.

  6. Sauce

    Meanwhile, mix cream, sugar, butter, and hot water in a saucepan. Heat gently until sugar dissolves.

  7. Soak

    Once pudding is done, remove from oven and pierce the surface with a fork. Pour the warm sauce over immediately.
