Try this Curry Noodle Salad, a delicious mix of tender noodles, crunchy peppers, and onions, all tossed in a sweet and spicy curry-tomato dressing. Perfectly balanced with tangy vinegar and a hint of heat, it’s a colourful, flavour-packed dish that’s sure to delight at any meal!
Ingredients:
- 1 Packet noodles ( screws)
- 1 green pepper, diced
- 1 onion, diced
- 3 tsp hot curry powder
- 7 ml salt
- 250ml tomato sauce
- 125ml oil
- 125ml vinegar
- 250ml sugar
Preparation
Step 1: Cook noodles until soft but firm
Step 2: Heat oil in a frying pan and fry onion and green pepper until onions are transparent.
Step 3: Add salt and pepper and fry a little.
Step4: Add curry powder and cook through.
Step 5: Add tomato sauce and cook through.
Step 6: Add sugar, vinegar and oil. Cook through.
Step 7: Let mixture cool a little.
Step 8: Pour over noodles and mix. Serve hot or cold.
Optional: Mix in a small tin of chopped peach slices.
