Hearty potato soup with bacon

(Serves 6)

Ingredients: 

  • 50ml butter or margarine
  • 2 onions, diced
  • 1 kg / 6 large potatoes, peeled and diced
  • 250g rindless bacon, chopped
  • Salt and freshly ground black pepper
  • 5ml garlic, crushed
  • 1L of chicken stock
  • 180ml cream (optional)
  • 345ml milk
  • Ground nutmeg (to taste)

Preparation:

Step 1: Heat the butter in a pot and sauté the onion, bacon, garlic and potato lightly for about 10 minutes without letting it brown. 

Step 2: Add the chicken stock as well as salt and pepper. Heat until it reaches boilig point. Turn down the heat, cover the pot and let it simmer for between 20 and 25 minutes until the potatoes are soft. 

Step 3: Liquidise until smooth and stir in milk and nutmeg . Heat until boiling point and then simmer for 5 minutes. Add the cream and serve warm.

Tip: Garnish with croutons, chives and crispy bacon pieces.
